How do you know what wine to serve with your dish, or vice versa? Once upon a time there were hard rules about what wine to serve with dinner. "Red wine with beef. White wine with chicken or fish." Those rules were left behind almost two decades ago. The new rule became, "If you like it, serve it with anything." This rule had value to it. It removed some of the mystical barriers to wine. Yet, the original rules had truth to them as well. They recognized that some foods do not interact well with some wines. So, we have come to a more baroque approach to paring wine and food. Many people will gladly offer you advice. Some of it is good. Sometimes the advice is horrible. Here is mine to be added to the rest. Take what pleases your palate and discard the rest.

Whether you are looking for a wine for casual sipping by the pool with friends, a formal dinner, or an evening meal at home, there is a wine to suit the need. How do you know if the Chanin Blanc you have in the refrigerator will compliment your chicken enchiladas? Will the Merlot your guest brought clash with the cod? The following lists we have linked here will give recommendations to help you balance flavors. I've included the most commonly drunk wines and food varieties. Do not let these limit you. Use the guidelines to help define your own personal preferences.
